These green (un-roasted) coffee beans come from several farmers in the Caranavi region of Bolivia. For the past 16 years we have been buying cupped-by-the-bag coffee at guaranteed minimum prices, based on quality, as part of a multi-year contract with several farmers, many times buying all of their production. This year most of our coffee comes from the Montana Verde Cooperative in Villa del Camen, camino a Kantutani (where our own second farm is located) and our own farms in Copacabana/Fortin. We are very happy with our long term relationship with them and we have already seen significant improvements in the quality of their coffee and the lives of the farmers. We are proud to be the main source and inspiration for both improvements. These coffee beans are 100% Specialty Arabica (Tipica 30%, Caturra 20%, Catuai 20%, Icatu 30%), certified organic and Fair Trade and shade-grown in the higher altitudes. These coffee beans were de-pulped and washed using pure Andes mountain-spring water, sun-dried on wooden table tops and hand selected by "Palliris" (Aymara Indian women food graders).
Because of their flavor and aroma (see cupping notes below) we prefer a moderately dark (#45 Agtron/SCCA) roast for these coffee beans. However, other roasters prefer it darker-roasted. Some roasters use it as a single-origin, others use it as a mandatory component of their special "secret" blend. Try all combinations and you decide!
Retail sales (out of Salisbury) are certified by Baystate Organic Certifiers. Wholesale orders (132 lbs. and more) are certified by Control Union. NL.
